I was working at McCormick Place this weekend and was happy to notice the disposable utensils in the cafeterias are eco-friendly! They are fully compostable products made from potato starch. Although slightly less durable than plasticware, they are VERY green and well worth the investment. It was nice to see a huge convention center like McCormick making some effort to be green.
